Kebabs 101: A Brief History, Preparation Tips and Recipes

Before we get into the meat of this blog, we feel we need to clear the air on one thing. There are some people out there who need to give kebabs a second chance for the sole reason that the kebab they consumed when casting judgement upon this unique and delightful treat, was not crafted with quality ingredients, like Cotton Cattle’s Kebab/Stew Chunks.  Sure, it can be awkward to gnaw through meat on a stick if you’re talking about stiff, low-grade, irresponsibly raised meat. What does chorizo taste like? It’s on the spicy side, but still considered a bearable spice by most (not “melt your face off” type of spice, typically a kick of heat). The spice comes from hot pepper seasonings. Mexican chorizo is typically seasoned with vinegar and chile peppers. Spanish chorizo contains garlic and paprika, which is why it usually has a deeper red color, although both types air on the side of a rich red color. Spanish and Mexican chorizo? Spanish chorizo is produced as a dried...

Please Read Between the Factory Meat Lines

The New York Times recently ran a story about blind taste testing six top contenders of fake meat and plant-based burgers.  There are quotes reiterating the belief that it's better for our health and the environment if consumers eat one of the "other burgers" instead of a real meat burger. These types of stories are literally everywhere right now but one quote from this story in particular caught our attention. It was from Isa Chandra Moskowitz, the chef at the vegan restaurant Modern Love in Omaha, where her own burger is the most popular dish on the menu. She states, "it’s better for people and for the planet to eat one of those burgers instead of meat every day, if that’s what they are going to...
