Your Guide to Chorizo + How to Enjoy It (4 Chorizo Recipes Included)

What is chorizo made out of? Usually ground or roughly chopped pork.  Highly seasoned, typically spicy. High fat content. Often sold wrapped in a casing, like a sausage, or as a ground meat. What does chorizo taste like? It’s on the spicy side, but still considered a bearable spice by most (not “melt your face off” type of spice, typically a kick of heat). Reflection and Perspective Go a Long Way

New Jersey Audubon fosters environmental awareness and a conservation ethic among New Jersey’s citizens; protects New Jersey’s birds, mammals, other animals, and plants, especially endangered and threatened species; and promotes preservation of New Jersey’s valuable natural habitats. For these reasons, it made perfect sense to partner with them for a bird walk on our property last year (recap article below).  NJ Audubon was particularly interested in working with Cotton Cattle to access our abundance of high quality grasslands. Sadly, these types of environments that benefit a variety a creatures - not just our cattle and birds - are dwindling more and more each year.
