The Brisket comes from the foreshank or the front legs of the cow, just below the Chuck. Rolled Brisket is most popular as a smoked meat. It is a great addition to your crock pot or for making your own corn beef. Brisket contains the similar bands of fat and connective tissue, found in the Chuck, giving it a wonderful flavor. Brisket, like the Chuck, falls off your fork when braised on a low heat for 8-10 hours.
